    • The present invention provides for a food waste disposer having a food conveying section (102), a grinding section (104), a motor section (106) and a controller (220). The motor section comprises a switched reluctance motor having a rotor and a stator. The controller is electrically connected to the stator to control the switched reluctance machine. The controller is capable of directing rotational movement to the rotatable shaft (126) and the portion of the grinding mechanism mounted thereon. The controller is further capable of maintaining the rotational movement of the rotatable shaft at more than one rotational speed. The present invention also includes methods of operating a variable speed motor in different operational modes such as a soft start mode, optimized grinding mode, idle more, rinse mode, and an anti-jamming mode.

A drive circuit energizes the winding wire (124) around the stator segment assemblies (118) based on the rotational position of the rotor (116).

The permanent magnets have a magnet dimension angle between 31 and 35 degrees. An air gap ratio of the electric machine is between 1.35 and 2.5. A slot opening ratio of the electric machine is less than or equal to one. In another embodiment, the permanent magnet electric machine has an 18/12 slot/pole combination. The permanent magnets have a magnet dimension angle that is between 25 and 28 degrees. An air gap ratio of the electric machine is between 1.35 and 2.5.
