Such a knife assembly includes a knife holder having a support surface that defines a leading edge of the knife holder and a trailing end spaced from the leading edge, an insert disposed on the support surface so that a leading edge thereof projects beyond the leading edge of the knife holder and a trailing end thereof is secured to the knife holder, a knife clamped to the knife holder so that the insert is between the knife and the support surface. The trailing end of the insert is secured to the knife holder as a result of the trailing end being received in a slot defined in the trailing end of the support surface, or with posts protruding from the support surface that engage slots defined in the trailing end of the insert.

Such a knife (34,38,40,68) has a longitudinal length defining oppositely-disposed first and second ends and defining oppositely-disposed edges (35,41,60a,60b) between the first and second ends. Each of the edges (35,41,60a,60b) has a cutting edge defined thereon adapted for slicing food products. As a result, the knife (34,38,40,68) has two operational life spans and can be removed and reinstalled to utilize either of its cutting edges.

The knife has a central region therebetween and a base and opposite sides located along a longitudinal extent thereof. The hollow spindle has a slot for receiving the knife. The slot has a base wall for engaging and supporting the base of the knife and side walls for engaging and supporting the sides of the knife. The spindle includes a circumferential wall in which at least two circumferential gaps are present to segment the wall into at least two end wall segments and a third wall segment therebetween. The gaps separate the slot into at least two end slot segments and a third slot segment therebetween that are complementary to and receive, respectively, the base and side walls of the knife at the longitudinal ends and central region, respectively, of the knife.

The cutting heads include axially-spaced annular-shaped structural members and circumferentially-spaced support segments between the structural members. A knife assembly is located adjacent the leading edge of each support segment.
