本发明公开了一种大米肽的提取方法，该方法采用市售大米蛋白粉为主要原料，经过配水和乙醇、加亚硫酸钠升温蒸煮、过滤、复合酶酶解、灭酶、脱色、膜分离，将得到的滤液经干燥后即获大米肽。本发明方法生产周期短、成本低、不产生任何有毒有害物质，而且所得产品安全性高，可广泛应用于食品、药品和保健品等领域。
摘要（英）：
The invention discloses a method for extracting rice peptides. The method comprises the following steps of: adding water and ethanol into commercially available rice protein meal serving as a major raw material; adding sodium sulfite and raising the temperature for steaming; filtering; performing enzymolysis with complex enzyme; inactivating enzyme; de-coloring; performing membrane separation; and drying the obtained filtrate so as to obtain the rice peptides. The method of the invention has short production period and low cost and toxic and harmful substances are not produced; moreover, an obtained product has high safety and can be widely applied to fields such as foods, medicaments, health-care products and the like.
