The invention provides a fast filling and squeezing device and method of agar carrageenan gel, wherein the filling and squeezing of gel are completed on the same device; wafers with different thicknesses can be produced via adjusting gaps between mobile partitions in a squeezing box; a lifting hydraulic device is used for lifting the height of the squeezing box; and a filling face or a compression face of the squeezing box is upward by adjusting angles of the squeezing box by a reduction gearbox transmission gear, so that the filling and squeezing dehydration of the gel are convenient. The whole filling and squeezing processes are simple; the operation is convenient; fields, equipment, labours and time needed by gel dehydration process are effectively reduced; the working efficiency is improved; and the production cost is reduced.
