The invention discloses an almond oil extracting and refining process. The almond oil extracting and refining process comprises the following steps: (1) pre-treating almonds; (2) extracting and refining almond oil. The process adopts low-temperature physical squeezing and does not utilize an organic solvent, so that no chemical pollution is caused; a refining process is simple and easy to operate, is wholly carried out under a vacuum condition and meets first-level edible oil standards. The low-temperature physical squeezing is adopted and the bioactivity of proteins, vitamins and unsaturated fatty acids in the almonds is effectively prevented from being damaged; the content of saturated fatty acids in prepared almond refined oil is low and the content of the unsaturated fatty acids reaches 95.34 percent; the content of oleic acid is the highest. By combining the low-temperature physical squeezing and microwave assisted water enzymolysis method, the extraction efficiency of the almond oil is greatly improved; the almonds are treated by a pre-treatment process so that the loss of the VE and VD3 in an extracting process is greatly reduced and the content of the VE and VD3 in the almond refined oil is improved.
