The invention discloses a Sulawesi garcinia celebica preserve and a preparation method thereof, and relates to fruit preserves. The Sulawesi garcinia celebica original juice preserve comprises the following components in percentage by mass: 13-17 parts of garcinia celebica, 6-10 parts of sugar and 2-6 parts of salt water, wherein the mass percentage concentration of the salt water is 0.8-1.2%. Thepreparation method comprises the following steps of: picking ripe and full Sulawesi garcinia celebica, and cleaning the garcinia celebica for later use; adding sugar and salt water into the Sulawesigarcinia celebica, boiling the materials until the peel is slightly softer, keeping the fruit shape complete, and keeping the fruit color unchanged; filling and sealing the Sulawesi garcinia celebica,and carrying out sterilization; and preserving the garcinia celebica in a refrigerator at 0-4 DEG C, or removing sugar juice, freezing the fruit at -20 to -80 DEG C, and freeze-drying the fruit to obtain a dry product. The fruit of the rare tropical fruit tree namely Sulawesi garcinia celebica in China is used as a raw material. No pigment, essence and preservative are added. The fruit juice doesnot contain any essence and preservative, only sugar and salt water are added in the original juice to adjust the sugar acidity and protect the color, thereby confirming the edible safety of the preserved fruit.
