The invention discloses a supermicro-nano production process of instant tea powder. The process comprises the process steps as follows: S1, filtration and drying; S2, ultrasonic extraction; S3, cooling; S4, crushing; and S5, packaging and storing. The process has the benefits as follows: (1) the nanotechnology is introduced in the field of extraction of tea polyphenol and instant tea, and the utilization efficiency is improved; (2) the process meets the demand of people for food diversity and conforms to the rapid consumption concept; and (3) the solubility of the product is greatly improved,the product can be quickly absorbed by the human body after taking, the resistance and immunity are enhanced, and the physique of people is enhanced.
