    • PROBLEM TO BE SOLVED: To obtain fermented soybean paste highly containing a isoflavone compound, decreased in bitterness derived from the isoflavone, expected to have an effect of preventing or treating osteoporosis, and having good flavor. SOLUTION: This fermented soybean paste highly containing the isoflavone compound is obtained by adding and mixing the isoflavone compound (including genistin, daidzin, and glycitin, and further genistein, daidzein, and glycitein which are aglycones of the above compounds, respectively) in an amount of 0.1-5.0 %(W/W) and dried fish, such as dried bonito and dried small sardine, or a processed material of the dried fish (including an alcoholic extract of the dried fish which is obtained by adding a water-containing aqueous alcohol to the dried fish to conduct extraction and then concentrating an extract solution obtained by the extraction, a hot-water extract of the dried fish, and finely-ground dried fish) to and with a raw material for the fermented soybean paste in a process for producing the paste or a fermented soybean paste product.
