Foodstuffs and other bodies are frozen or cooled by immersion in a liquid which has been cooled by liquid nitrogen. As shown in Fig. 1, an article 26 is immersed in a liquid bath 4 into which liquid nitrogen is injected by distributers 8, 10 having respectively high and low flow rates. A temperature senser 23 opens a supply valve 21 for distributer 10 when the temperature of liquid 4 is below a predetermined value and opens a supply valve 20 for distributer 8 when the temperature is above said value. Liquid 4 may be an alcohol, a silicone oil or a fluorocarbon and, if the latter, may be liquefied prior to introduction to the bath by heat exchange with the liquid nitrogen (Fig. 2, not shown). In the embodiment of Fig. 4, an annular partition 58 divides the bath into inner and outer compartments 60, 62 maintained at different temperatures by nitrogen supplied through lines 64, 65. The articles are suspended from a rotatable device 68, 70 which can be raised and lowered to transfer the articles from one compartment to the other. In a further embodiment (Fig. 3, not shown) the articles are carried by a conveyer which depends over part of its travel into a liquid nitrogen cooled bath, the vapour from the bath being circulated by fans to provide pre- and post-cooling of the articles.
