    • Lipase is produced by fermenting protein-containing refuse of vegetable seeds of kinds containing much oil or together with castor bean refuse at such a temperature that fungus rich in lipase is propagated, treating the fermented mass with water, removing the precipitate from the solution obtained, and adding acetic acid to said solution to precipitate the lipase. In one example, a mixture of castor bean refuse and soya bean refuse is kept at 30-40 DEG C. for about a week. The protein in the soya bean refuse has then been changed into a malt-like substance which is mixed with water and allowed to dissolve, the non-fermented material precipitating. The solution is separated and the lipase obtained therefrom by precipitation with acetic acid or by evaporation at a low temperature. Alternatively, the castor bean refuse can first be fermented alone, and the soya bean or other refuse then added and the fermentation continued, the lipase being separated as before.
