    • A method is disclosed for mechanically deboning animal thighs for separating and collecting meat therefrom and an apparatus (1) for performing the method, including automated individual processing steps. The processing steps include: grasping a thigh bone of an animal thigh at a hip knuckle with a bone holder (17); cutting tissue near the hip knuckle; and engaging the thigh bone adjacent the bone holder with a meat stripper (165). The processing steps further include: moving the bone holder (17) and meat stripper (165) away from one another in a direction substantially coextensive with the longitudinal extent of the thigh bone; allowing the meat stripper (165) to pass over the knee knuckle; and collecting the meat separated from the bone. In particular the method includes and the apparatus (1) performs the process step of cutting tissue adjacent a knee knuckle of the thigh bone, prior to allowing the meat stripper (165) to pass over the knee knuckle. The apparatus (1) includes a plurality of processing stations (23, 25, 27, 29, 68, 77, 79, 81) for carrying out the individual steps, and the processing stations are arranged along a path of conveyance defined by a conveyor chain (35, 41, 43) moving through a predefined path (3, 5, 7, 9).

    • An apparatus and method for displaying the weight or cost of segments of an irregularly shaped item involves passing a sensor bar supported above a supporting surface over the item lying on the surface. A compact hand-held embodiment of the sensor bar enables the operator to move the sensor bar in various linear or non-linear motions over the item surface as the sensor bar moves laterally across the item surface while the sensor bar support posts remain in constant contact with the supporting surface. The sensor bar contains one or more sensors which generate signals corresponding to the height of the item as the sensor bar traverses the item. At the same time, a displacement detector arrangement generates signals corresponding to displacement of the sensor bar relative to the support surface. These signals are processed in a signal processor to determine the volume of an uncut segment of the item lying behind the sensor bar at successive positions. Each of these cumulative volume determinations may be continuously converted into numeric weight values based on the density factor for the particular type of item, whereby numeric weight and cost values (based on weight) are continuously displayed as the sensor bar is stroked over the item, thus enabling the operator to accommodate an on-looking consumer's specific requests as per the particular portion desired based on the physical appearance, weight, and cost of an item before the item is cut.

    • An apparatus for holding a gutted animal body having an empty body cavity that has an open end and a closed end has an elongated holder body having a front portion and a rear portion offset along a longitudinal axis of the holder body from the front portion. The portions are interconnected for relative axial displacement between an adjacent position and an axially extended position. A holder is provided on the front portion for engaging same in the closed end and another holder is provided on the rear portion for engaging same adjacent the open end when the holder of the front portion is engaged with the closed end. The system is operated such that, on engagement of the holder body in the body cavity with the portions in the adjacent position, the rear holder is engaged with the animal body adjacent the respective end, the front and rear portions are axially extended away from each other, and then the front holder is engaged with the respective cavity end.
