The processing method comprises following steps: fresh roe deer meat is washed, cut into pieces, is immersed in cold water, is taken out from cold water for draining, is uniformly coated with the fermentation product via smearing, and is stored at 4 to 20 DEG C for 12 to 48h. A preparation method of the fermentation product comprises following step: 1, soybean is immersed with corn stigma water extracted solution, and is boiled with water; 2, inoculation with mucor or Aspergillus oryzae is carried out; 3, fermentation and culture-disturbing are carried out; and 4, the corn stigma water extracted solution is added, and immersion, fermentation, and smashing are carried out. The processing method is capable of maintaining the original fresh and tender mouthfeel and nutrients of roe deer, and removing the earthy smell and the goaty smell of roe deer effectively.
