摘要： A carcass cleaning tool for removing dag from a suspended carcass has a body with at least one handle mounted to it for allowing an operator to hold the tool away from them. A driver is mounted in the body and rotates a head having a shaft extending therefrom. A plurality of arms extend from the shaft and have tines at distal ends, the tines adapted to engage the animal carcass to remove dag from the carcass hide. The head is oriented to permit movement of the arms and tines in front of the tool operator. A suspension point for hanging the body from an overhead support permits the operator to move the tool arms and tines toward and away from the carcass to remove the dag without damaging the carcass hide. The tool body never makes contact with the ground as a result of using the suspension point.

A method for reducing bacterial load on meat or poultry includes generating a plurality of zones within a chiller bath containing water by dosing a source of alkalinity and antimicrobial into the water, wherein the plurality of zones comprises at least one alkaline zone with a pH above 8.5, and at least one antimicrobial zone with pH below 8.5; and submersing meat or poultry in the bath. The zones can also be generated using spray nozzles in a meat or poultry operation.

摘要： In a hollow cylindrical housing which stores a coolant, a feeding device having a rotating shaft and spiral screw vanes fixedly installed on the periphery of the rotating shaft is provided. A robotic arm is carried on a moveable table and has mounted thereon a servo motor-driven band saw capable of effecting a splitting operation on the beef carcass. The band saw is counterbalanced by a mass having a weight less than the weight of the band saw, and the robotic arm has a maximum load-carrying capacity less than the weight of the band saw. A torque monitor for the servo motor detects breaks in the band saw or breaks in the support for the band saw. A vision-based sensor system detects location of a tail bone on the beef carcass. The system includes a controller in communication with the carcass rail, the carcass processing device and motor, and the vision-based sensor system.

The shoe includes a central nose portion which is directed counter to the rotation direction of the skinning roller, having two side edges and a leading skin gripping edge, wherein the side of the nose portion facing the skinning roller comprises an arcuate surface having a curvature corresponding essentially to the curvature of the skinning roller, wherein a skin gripping gap is defined between the arcuate surface of the central nose portion and the skinning roller. The shoe further includes at least one bridging portion between the central nose portion and the end of the shoe that is fastened to the support frame, arranged downstream of the leading skin gripping edge when seen in the rotation direction of the skinning roller, wherein a bridge clearance is defined between the bridging portion and the skinning roller.

摘要： A meat stripper is disclosed for stripping meat from the bone of an animal part. The meat stripper includes a slide block and a first stripper plate assembly including an arm pivotally mounted to the slide block and having a first stripper plate at an opposite end. A second stripper plate assembly including an arm is pivotally mounted to the slide block and has a second stripper plate at an opposite end with the second stripper plate opposing the first stripper plate. The first and second stripper plates move away from each other to open the meat stripper when the arms are pivoted apart and move toward each other to surround the bone when the arms are pivoted together. A mechanism is disclosed for moving the stripper plates along the length of the bone to strip meat from the bone. A mechanism also is disclosed for articulating at least one of the stripper plates after meat has been stripped from the bone in such a way that meat lodged in or on the stripper is dislodged and falls to a collection location below. In one example, the pivot plate pivots to dislodge the meat and is magnetically biased to a stripping position.
