摘要： A baking oven for producing baked, preferably edible products, includes at least one upper heating apparatus configured as a radiant heating apparatus and at least one lower heating apparatus configured as a radiant heating apparatus in each of which a fuel mixture containing primary air and a fuel is burnt. The upper heating apparatus is disposed in an upper baking area and above an upper transport level and is directed onto a back surface of an upper plate configuration for heating a baking mould from above. The lower heating apparatus is disposed in a lower baking area between the upper transport level and a lower transport level and is directed onto the back surface of a lower plate configuration for heating the baking mould from above.

摘要： The cooking module for a linear tunnel oven for bakery products includes a cooking chamber having a hearth, in the form of a conveyor belt, that is mobile and permeable to a gaseous heat-transfer fluid, a roof, and a heating device in the hearth and on the roof to cook the products. The heating device in the hearth includes a plurality of orifices for blowing the fluid. The belt is mobile above a sliding surface having openings for the fluid to pass through, and is mobile between two positions, a convection position where the openings coincide with the orifices to let the fluid pass through, and a second position known as a radiation position, where openings are offset from these orifices, the surface forming a screen for the fluid blown through the orifices.

摘要： A new electric broiler is disclosed. The broiler includes a housing having a cooking chamber, and a cooking surface in the housing. Upper and lower electrical heat sources are provided in the cooking chamber above and below the cooking surface. The lower heat source includes a removable heating module having an electric heating element and a quick connect/disconnect connector for quick electrical connection and disconnection of the electric heating element to and from a quick connect/disconnect connector on the housing. The broiler also includes a module holder on the housing for holding the removable heating module. The heating module is removable from the holder for quick replacement of the module.

The shielding member has an outer boundary, and one or more portions of the outer boundary are spaced away from walls of the oven chamber so as to form an open space through which convective heat is able to pass. The shielding member is supported above the heating element by support elements on which the shielding member rests and a portion of the outer boundary of the shielding member that extends away from the remainder of the shielding member to the bottom wall of the oven chamber, and the latter portion of the outer boundary of the shielding member attaches to a bracket fastened to the bottom wall of the oven chamber.

摘要： A cooking appliance includes an exhaust system that substantially eliminates potential smoke generating byproducts carried by oven gases. The cooking appliance includes an oven cavity having a top wall including a recessed portion within which is mounted a broil element. A plurality of openings are formed in the recessed portion that allow exhaust gases to pass into a smoke elimination chamber. Heat generated by the broil element and in the smoke elimination chamber removes substantially all combustion byproducts contained in the exhaust gases. To further remove combustion byproducts, the exhaust gases are passed through a ceramic catalyst prior to being directed into a vent duct. From the vent duct, the exhaust gasses are directed past a blower into an exhaust duct that, ultimately, guides the exhaust gases from the appliance.
