A process and apparatus for inner wall toasting of casks (1) for wine guard by hot air convection, with controlled temperature which allows setting desired cask heating time and temperature. The process comprises: (a) connecting the inside of the cask to mechanical elements (2,4) to form a hermetic toasting chamber wherein no aromatic compounds are liberated to the outside; (b) circulating an air stream within said chamber; (c) directly or indirectly heating said air stream to a temperature varying from 140°C to about 230°C; (d) directing said air stream to the inner cask walls; (e) capturing said air stream at the cask outlet; (f) directly or indirectly reheating said captured air stream to a temperature between 140°C to about 230°C; (g) recycling said reheated air stream to the inner cask walls; and (h) maintaining stage (g) for a required time to achieve the desired temperature and/or toasting.

A stationary furnace 5 smaller than a barrel 15 is suitable for burning solid fuels. It has an airflow generator such as bellows or blower 10. A crane 20 is provided which can pick up an open ended barrel 15 from a storage location, move it and place it over the furnace so that the furnace projects through the opening into the barrels interior. The furnace can then char the internal surface of the barrel with a solid fuel such as peat to impart a flavor to an alcoholic spirit such as whiskey to be matured in the barrel. The hoist can subsequently lift the barrel off the furnace and move it back to the storage position. The rate of movement of the hoist is controllable to evenly char the barrels interior. The furnace can have a main body 25 and a cover 30 with gap 35 between them suitable to release ash.

A platform has an opening therein. The platform is adapted to receive a heat source therein. The platform is rotatably disposed about the heat source. A motor is operatively coupled to the platform for rotating the platform about the heat source. A temperature sensor senses the temperature at a predetermined position on the interior surface of a barrel disposed on said platform and provides a temperature output. A central processing unit has a clock for measuring an interval during which a barrel is exposed to the heat source. A database stores toasting recipes, which are a function of time and temperature. The central processing unit receives an input from the sensor and clock and utilizes the recipe stored in the database to provide an output to an alarm if the sensed temperature during the input time interval does not substantially correspond the recipe as stored in the database.

The present invention relates to an apparatus and method for shaving the inside of barrels. In particular, the present invention relates to reconditioning used wine barrels by shaving the inside surface to a predetermined depth, ready for re-crozering, toasting, and re-use. Conventional shaving methods typically involve routing the internal surface by hand, but this technique is problematic in that it is a very slow process, the quality of the wood is often adversely affected, and there is no way of ensuring that the surface will be shaved to the same depth across the entire surface. Therefore, the resultant internal dimensions of the barrel are not reflective, relatively, of the original barrel surface. The apparatus of the present invention includes a scanning device adapted to scan the internal dimensions of the barrel, and a cutting device adapted to shave the internal surface to a predetermined depth relative to the scanned internal dimensions.

A mobile system for reconditioning used barrels is disclosed. The system includes a portable shaving apparatus 32 having a scanning means 34. A portable toasting apparatus reconditions the shaved internal surface so that is ready for re-use. A portable means of re-crozing at least one end of the barrel, the means including an annular support configured to rest on top of the barrel during use, and a cutting means configured to rotate relative to the annular support and thereby form a groove along the inside surface of the barrel adjacent to at least one end. The groove is adapted to accommodate a barrel head.

An independent claim is also included for an apparatus to carry out a convective toasting process of casks for wine guard, comprising connecting unit to connect a cask with mechanical elements to maintain hermetic environment, circulating unit to circulate an air stream within the hermetic environment, heating unit to heat the air stream, controlling unit to control the temperature of the air to be introduced into the casks, circulating unit to circulate the hot air stream into the cask from an inlet to an outlet, where the hot air stream circulates over the inner cask walls, and capturing unit to capture air from the cask outlet and to recycle it to the cask inlet.
